Spinach makes a delightful addition to any green salad. Or serve spinach salad with diced hard cooked eggs, bacon, and a vinaigrette dressing. To cook spinach, steam and serve with lemon juice and salt and pepper. Cream of spinach soup (cooked and pureed with chicken broth, marjoram, onions, and milk) is a favorite, as well–the key is not to over-cook the spinach for the soup.
