To prepare this staple, peel, or scrub with a vegetable brush, removing any sprouts or bad spots. To bake potatoes, poke with a knife several times, rub with butter, wrap in foil, and bake at 350 until tender. Boil, drain, and mash with milk and butter for mashed potatoes (you can leave the skins on for more down-home mashed potatoes). Or chunk and pan-fry, shred for hash browns, or slice and toss with oil and salt and bake/broil for healthier French fries.
