Chile Relleno casserole is a favorite side dish with any Mexican meal–blanche peppers in boiling water for 5 minutes, stuff with cheese, place in greased baking dish, and cover with eggs beaten with milk, flour, baking powder, and salt. Sprinkle with grated cheese, and bake until golden.
