Kale
Kale is a hardy member of the cabbage family, rich in vitamin A, calcium, iron, and other vitamins and minerals.
Cut or tear the leaves off the stem, and serve in soup or stir fries. Saute alone in olive oil. Or try kale chips–a favorite made by tossing kale pieces in olive oil and sea salt, then baking at 400 until the leaves just begin to crisp (5 to 10 minutes).
