To prepare cabbage, remove any wilted outer leaves, and wash. Cut into quarters and remove center core. Shred for slaw, tacos, or salad. For a vegetable side, chunk and steam until tender-crisp and serve with salt and pepper. Also good in soups and stews. Young cabbage contains large amounts of vitamin C.
