Broccoli
To prepare broccoli, remove leaves and bottom of stalk. Wash, then steam or boil in salted water until tender-crisp, but not soft. Top with grated cheese or serve with a sauce of lemon juice, butter, minced garlic, salt, and pepper. Also a delicious addition to vegetable lasagne, or any soup or casserole. Simmer with milk, chicken broth, flour, cheese, bacon, onions, and chili peppers for cream of broccoli soup with a kick.
Broccoli hides lots of calcium, iron, vitamin A, and vitamin C, as well as some B vitamins in those little green flowerets.
