Bok Choy is a member of the cabbage family that resembles celery. Use the leaves and stalks of this versatile veggie in stir fry or salads, cooked or raw. Toss with cold cooked chicken for an Asian salad, use in place of celery in any recipe, saute with a bit of vinegar and serve alone. Any way you serve it, you’ll get a good dose of Vitamins A and C and calcium, and enjoy a tasty bit of greens.
